Classic Indian Chai
The perfect cup of strong, milky Indian chai — brewed with loose-leaf tea, simmered with milk, and sweetened just right. A daily ritual in every Indian home.
Method
- 1
Boil the water
Bring water to a rolling boil in a small saucepan over medium-high heat.
- 2
Add tea leaves
Add the loose-leaf tea to the boiling water. Let it brew for 1–2 minutes until the water turns a deep amber colour.
- 3
Add milk and sugar
Pour in the milk and add sugar. Stir well and bring the mixture to a full boil over medium heat.
- 4
Simmer and froth
Reduce heat and let the chai simmer for 3–4 minutes, stirring occasionally. For extra froth, pour the chai back and forth between the pan and a cup from a height.
- 5
Strain and serve
Strain through a fine mesh strainer into cups. Serve immediately while piping hot.
