Jaggery Tea
Traditional Indian chai sweetened with jaggery instead of sugar — earthy, caramel-like, and deeply comforting. A healthier, more flavourful alternative to regular chai.
Method
- 1
Boil water with ginger
Bring water to a boil in a saucepan. Add grated ginger and let it infuse for 1 minute.
- 2
Add tea leaves
Add the loose-leaf tea and brew for 1–2 minutes until the water turns deep amber.
- 3
Add milk
Pour in the milk and bring to a full boil over medium heat, stirring occasionally.
- 4
Add jaggery
Remove from heat and add the grated jaggery. Stir until completely dissolved. Do not boil after adding jaggery — it can curdle the milk.
- 5
Strain and serve
Strain through a fine mesh strainer into cups. Serve immediately.
