Masala Chai
Aromatic, warming masala chai with freshly ground spices — cardamom, ginger, cinnamon, cloves, and black pepper. The definitive Indian spiced tea.
Method
- 1
Crush the spices
Lightly crush cardamom pods, peppercorns, and cloves using a mortar and pestle. You want them cracked open, not powdered.
- 2
Boil spices and ginger
Bring water to a boil in a saucepan. Add all the crushed spices, ginger, and cinnamon stick. Boil for 2–3 minutes to extract the flavours.
- 3
Add tea leaves
Add the loose-leaf tea and brew for 1–2 minutes until the water turns deep amber.
- 4
Add milk and sugar
Pour in the milk and add sugar. Bring to a full boil over medium heat, then reduce and simmer for 3–4 minutes.
- 5
Strain and serve
Strain through a fine mesh strainer into cups, pressing the spices to extract every last drop. Serve immediately.
