Irani Chai
The legendary Hyderabadi Irani chai — a strong, dark tea served alongside a separate cup of thick, sweetened reduced milk (dum). Dunk, sip, and experience a Hyderabad institution.
Method
- 1
Make the dum (reduced milk)
In a heavy-bottomed saucepan, combine milk, sugar, condensed milk, and cardamom pods. Bring to a boil over medium heat, then reduce to the lowest possible heat. Simmer uncovered for 15–20 minutes, stirring every few minutes, until the milk reduces by about one-third and thickens to a creamy consistency.
- 2
Brew the tea
In a separate saucepan, bring water to a boil. Add tea leaves and brew for 3–4 minutes for a very strong, dark tea. Strain into a teapot or jug.
- 3
Serve separately
Pour the strong black tea into one cup and the thick, sweetened dum milk into a separate small cup or bowl alongside it.
- 4
Drink the Irani way
Take a sip of the strong tea, then a sip of the sweet dum milk. Or pour a little dum into the tea. Traditionally served with Osmania biscuits for dunking.
