Chocolate Fudge Cookies
Dense, fudgy chocolate cookies with a crackled top and an almost brownie-like interior. Pure chocolate intensity in every bite.
Method
- 1
Melt chocolate and butter
Melt dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth. Cool for 10 minutes.
- 2
Whisk eggs and sugar
In a separate bowl, whisk eggs and caster sugar vigorously for 2–3 minutes until pale and slightly thickened. Add vanilla.
- 3
Combine
Pour the melted chocolate mixture into the egg mixture and fold together. Sift in flour, cocoa, baking powder, and salt. Fold until just combined.
- 4
Rest
The batter will be very loose. Let it rest for 20 minutes — it will thicken to a scoopable consistency.
- 5
Bake
Preheat oven to 180°C. Scoop tablespoon-sized mounds onto lined trays. Bake for 9–10 minutes. They will look underdone and crackled on top — perfect.
