Peanut Butter Cookies
Thick, chewy peanut butter cookies with the classic crosshatch pattern. Intensely nutty, slightly salty, and completely addictive.
Method
- 1
Mix the dough
Beat peanut butter, brown sugar, and caster sugar until combined. Add egg and vanilla. Mix in flour, bicarbonate of soda, and salt until a dough forms.
- 2
Roll in sugar
Roll dough into balls (about 30g each). Roll each ball in caster sugar to coat.
- 3
Press the crosshatch
Place on lined trays. Use a fork to press a crosshatch pattern into each cookie, flattening to about 1cm thick.
- 4
Bake
Preheat oven to 180°C. Bake for 10–12 minutes until golden at the edges. They will be very soft — cool completely on the tray before moving.
