Cookies and Cream Ice Cream

Method

   Crush the cookies

   Place cookies in a zip-lock bag and crush with a rolling pin into a mix of fine crumbs and chunky pieces. Set aside.

   Make the base

   Stir vanilla extract and salt into the condensed milk.

   Whip the cream

   Whip the heavy cream to stiff peaks in a chilled bowl.

   Fold together

   Fold the vanilla condensed milk into the whipped cream until just combined.

   Add the cookies

   Fold in three-quarters of the crushed cookies. Pour into a container and scatter the remaining cookies on top.

   Freeze and serve

   Press cling wrap onto the surface and freeze for 6 hours. Scoop and serve with an extra cookie on the side.
