Cotton Candy Ice Cream

Method

   Make the base

   Stir cotton candy extract into the condensed milk. Taste and adjust flavouring.

   Whip the cream

   Whip the heavy cream to stiff peaks in a chilled bowl.

   Fold together

   Fold the cotton candy condensed milk into the whipped cream gently.

   Divide and colour

   Divide the mixture into two bowls. Tint one pink and one blue with food colouring.

   Swirl and freeze

   Alternate spoonfuls of pink and blue into the container. Swirl with a skewer. Freeze for 6 hours.

   Serve

   Scoop and top with a tuft of cotton candy floss just before serving.
