Orgeat Cream Fizz

Method

   Mix the base

   Combine orgeat syrup, lemon juice, and orange blossom water (if using) in a glass. Stir well.

   Add ice and soda

   Fill the glass with ice. Pour sparkling water over the ice slowly to preserve the fizz.

   Float the cream

   Lightly whip the heavy cream until it just starts to thicken — it should still be pourable. Float it gently over the top of the drink.

   Garnish and serve

   Garnish with a thin lemon wheel and a few crushed almonds. Serve immediately without stirring.
