Strawberry Cream Delight

Make the strawberry puree
Blend strawberries with sugar and lemon juice until completely smooth. Taste and adjust sweetness.

Build the layers
Fill glasses with ice. Pour the strawberry puree over the ice, filling the glass about halfway.

Slowly pour heavy cream over the back of a spoon to create a floating cream layer.

Top and serve
Gently top with sparkling water. Garnish with a fresh strawberry on the rim and serve immediately.
